What is hop utilisation?

Hop utilisation is the percentage of alpha acids in your hops that are successfully isomerised into iso-alpha acids during the boil. Iso-alpha acids are the primary source of bitterness in beer. Typical utilisation ranges from around 5% for very short additions to 28–32% for a 60-minute boil at moderate gravity.

Why does higher wort gravity reduce utilisation?

Higher-gravity worts have more dissolved sugars and other compounds that inhibit the isomerisation of alpha acids. The wort becomes more viscous and chemically complex, meaning fewer alpha acids successfully convert to bitter iso-alpha acids. This is why high-gravity beers often need more hops to achieve the same perceived bitterness.

Do pellet hops give better utilisation than whole hops?

Yes. Pellet hops are typically 10–15% more efficient than whole or plug hops. The pelletisation process crushes the lupulin glands and increases surface area, allowing more alpha acids to dissolve into the wort. This calculator applies a configurable pellet bonus (default 10%) when pellet hops are selected.

What is the difference between bittering and flavour IBUs?

Hops added with 20 minutes or more of boil time primarily contribute bitterness, as volatile aromatic compounds boil off. Additions with fewer than 20 minutes contribute more flavour and aroma alongside some bitterness. This calculator splits the calculated IBU into an approximate bittering and flavour component based on boil time.

Which formula is most accurate — Tinseth, Rager or Garetz?

All three are models, not exact measurements, and each has strengths. Tinseth is the most widely adopted by homebrewing software and is a good all-round choice. Rager tends to predict higher IBUs. Garetz accounts for concentration factor and yeast pitching rate. Stick with one formula consistently across your recipes for reliable relative comparisons.

How We Calculate This

This calculator estimates the bitterness contribution of a single hop addition based on alpha acid content, boil time, wort gravity, and batch volume.

Tinseth formula

Utilisation = Bigness Factor × Boil Time Factor

Bigness Factor = 1.65 × 0.000125^(gravity − 1)

Boil Time Factor = (1 − e^(−0.04 × time)) / 4.15

IBU calculation

IBU = (Hop weight (g) × AA% / 100 × Utilisation × 1000) / Volume (L)

A pellet hop bonus is applied multiplicatively to utilisation when pellets are selected. The bittering/flavour split is an approximation based on boil time relative to 20 minutes.
