What ratio should I use?

2.5-3.0 L/kg is standard for most mashes. Thicker mashes (2.0-2.5) produce fuller-bodied beers. Thinner mashes (3.0-4.0) are more fermentable and easier to work with. BIAB typically uses 4.0-6.0 L/kg.

How does thickness affect the beer?

Thicker mashes slow enzyme activity but preserve more complex sugars, creating a fuller body. Thinner mashes allow faster, more complete conversion, producing a drier beer. The effect is moderate compared to mash temperature.

Can the mash be too thick or thin?

Below 2.0 L/kg, stirring becomes very difficult and conversion is poor. Above 5.0 L/kg (except BIAB), you may need very large vessels and the mash can lose heat quickly. Stay within 2.0-4.0 L/kg for traditional mashing.

Does mash thickness affect fermentability?

Yes, slightly. Thinner mashes (higher water ratio) tend to produce more fermentable wort because the enzymes are more mobile and less likely to denature. Thicker mashes produce slightly less fermentable wort with more body. The effect is relatively small compared to mash temperature.

What ratio should I use for BIAB?

BIAB typically uses 3.5-5.0 L/kg since all the water goes into the mash. This thinner ratio is fine for conversion and actually helps efficiency. The main consideration is that your kettle must be large enough to hold all the water plus the grain.
