Most homebrewers successfully repitch washed yeast 6-10 times before flavour drift becomes noticeable. Professional breweries may go longer with careful handling. Always check for off-flavours and make a starter to confirm viability before pitching older harvested yeast.

Why does water temperature matter for yeast washing?

Cold water (1-4°C) keeps the yeast dormant during washing, reducing stress and preserving viability. Warm water can activate the yeast prematurely, leading to cell damage. Always use pre-boiled water that has been cooled to fridge temperature.

How long can I store washed yeast?

Washed yeast stored in sterile water at 1-4°C remains usable for 2-4 weeks with good viability. Beyond that, viability drops significantly. For longer storage, consider making a starter 24-48 hours before brew day to revive the cells.

Yeast Washing Process

Yeast washing separates viable yeast cells from trub by exploiting their different settling rates. Trub (heavy proteins, hop matter) settles faster than yeast cells. By repeatedly diluting with cold sterile water and decanting the suspended yeast, you progressively remove trub.

Recovery Estimation

Yeast recovered = Slurry yeast content × (1 − loss per wash)^washes

Each wash cycle removes approximately 70% of remaining trub but also loses about 8% of yeast cells. Three washes typically removes over 97% of trub while retaining roughly 78% of the original yeast.
